  • 1 ½ cups rolled oats
  • 1 cup all-purpose flour
  • ½ cup coconut sugar
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup coconut oil melted
  • 1 teaspoon vanilla extract

For the Berry Filling

  • 2 cups mixed berries fresh or frozen
  • ¼ cup maple syrup
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  • In a bowl, mix oats, flour, sugar, cinnamon, and salt. Stir in melted coconut oil and vanilla.
  • Press two-thirds of the mixture into the baking dish to form the crust.
  • In a saucepan, heat berries, syrup, lemon juice, and cornstarch until thickened.
  • Spread the berry mixture evenly over the crust.
  • Sprinkle the remaining crumble mixture on top.
  • Bake for 35 minutes until golden brown.
  • Let cool completely before cutting into bars.
