Ingredients
For the Crumble & Crust
- 1 ½ cups rolled oats
- 1 cup all-purpose flour
- ½ cup coconut sugar
- ½ teaspoon cinnamon
- ½ teaspoon salt
- ½ cup coconut oil melted
- 1 teaspoon vanilla extract
For the Berry Filling
- 2 cups mixed berries fresh or frozen
- ¼ cup maple syrup
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a bowl, mix oats, flour, sugar, cinnamon, and salt. Stir in melted coconut oil and vanilla.
- Press two-thirds of the mixture into the baking dish to form the crust.
- In a saucepan, heat berries, syrup, lemon juice, and cornstarch until thickened.
