For the Crumble & Crust
- 1 ½ cups rolled oats
- 1 cup all-purpose flour
- ½ cup coconut sugar
- ½ teaspoon cinnamon
- ½ teaspoon salt
- ½ cup coconut oil melted
- 1 teaspoon vanilla extract
For the Berry Filling
- 2 cups mixed berries fresh or frozen
- ¼ cup maple syrup
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
In a bowl, mix oats, flour, sugar, cinnamon, and salt. Stir in melted coconut oil and vanilla.
Press two-thirds of the mixture into the baking dish to form the crust.
In a saucepan, heat berries, syrup, lemon juice, and cornstarch until thickened.
Spread the berry mixture evenly over the crust.
Sprinkle the remaining crumble mixture on top.
Bake for 35 minutes until golden brown.
Let cool completely before cutting into bars.
