  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 6 cups vegetable broth
  • 2 cups chopped spinach
  • 1 celery stalk sliced
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F. Line a baking sheet with parchment and pretend it’s the altar.
