- 1/4 cup molasses
- 1/4 cup coconut oil melted
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground cloves
- 1 tablespoon almond milk or any plant-based milk
- 1/4 cup granulated sugar for rolling
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine flour, baking soda, salt, and spices.
In another bowl, whisk together coconut sugar, molasses, melted coconut oil, and almond milk.
Gradually add dry ingredients to wet ingredients and mix until smooth dough forms.
Roll dough into 1-inch balls and coat in granulated sugar.
Place cookies on the baking sheet and bake for 10-12 minutes, until edges are golden.
