- 4 bone-in pork chops 1-inch thick
- 1 cup bread crumbs
- 1/2 cup chopped spinach fresh or frozen
- 1/4 cup grated Parmesan cheese
- 1/2 onion finely chopped
- 2 cloves garlic minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup chicken broth
Preheat oven to 375°F.
Prepare stuffing: Sauté onions and garlic in olive oil until soft. Mix with bread crumbs, spinach, Parmesan, thyme, salt, and pepper.
Pound pork chops to an even thickness.
