Ingredients
  

  • 4 bone-in pork chops 1-inch thick
  • 1 cup bread crumbs
  • 1/2 cup chopped spinach fresh or frozen
  • 1/4 cup grated Parmesan cheese
  • 1/2 onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth

Instructions
 

  • Preheat oven to 375°F.
  • Prepare stuffing: Sauté onions and garlic in olive oil until soft. Mix with bread crumbs, spinach, Parmesan, thyme, salt, and pepper.
  • Pound pork chops to an even thickness.
  • Stuff the pork chops with the filling, securing with toothpicks or twine.
  • Sear chops in a hot skillet for 3-4 minutes per side until golden brown.
  • Transfer chops to oven, bake for 25-30 minutes, adding chicken broth halfway through to keep moist.
  • Serve hot with stuffing inside!
