Ingredients
  

For the crust:

  • 1 ½ cups graham cracker crumbs
  • 2 tbsp sugar
  • 6 tbsp melted butter

For the cheesecake filling:

  • 3 8 oz packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 1 tsp lemon juice

For the roasted apples:

  • 3 medium apples peeled and chopped
  • 2 tbsp butter
  • 1 tsp cinnamon
  • 2 tbsp brown sugar

For the crumble topping:

  • ½ cup rolled oats
  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • 5 tbsp cold butter

Instructions
 

  • Prepare the roasted apples: Preheat the oven to 375°F (190°C). Toss apples with butter, cinnamon, and brown sugar. Roast for 20 minutes.
  • Make the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  • Prepare the cheesecake filling: Beat softened cream cheese with sugar. Add eggs, vanilla, sour cream, and lemon juice. Blend until smooth.
  • Assemble the cheesecake: Pour cheesecake mixture over the crust. Layer roasted apples on top.
  • Make the crumble: Combine oats, flour, brown sugar, and cold butter. Rub butter in until a crumbly texture forms. Sprinkle on top of the apples.
  • Bake: Bake at 325°F (163°C) for 50 minutes, until the cheesecake is set.
  • Cool and refrigerate: Let cool for 10 minutes before refrigerating for at least 2 hours.
