Place chicken in a baking dish and bake for 25-30 minutes, until cooked through.
While chicken bakes, steam cauliflower florets until tender, about 10-15 minutes.
In a food processor, blend the steamed cauliflower, ghee, garlic, chicken broth, salt, and pepper until smooth and creamy.
Garnish cauliflower mash with chopped parsley.
Serve baked chicken alongside cauliflower mash and enjoy!
