  • 2 tbsp ghee or paleo-friendly butter
  • 2 garlic cloves minced
  • 1/4 cup chicken broth low-sodium
  • Salt and pepper to taste
  • 1/4 cup fresh parsley chopped (for garnish)

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Coat chicken breasts in olive oil and sprinkle with thyme, rosemary, garlic powder, salt, and pepper.
  • Place chicken in a baking dish and bake for 25-30 minutes, until cooked through.
  • While chicken bakes, steam cauliflower florets until tender, about 10-15 minutes.
  • In a food processor, blend the steamed cauliflower, ghee, garlic, chicken broth, salt, and pepper until smooth and creamy.
  • Garnish cauliflower mash with chopped parsley.
