Ingredients
  

Cookie Dough

  • 1 cup rolled oats old fashioned
  • 1 cup vanilla protein powder favorite brand
  • 2 pieces ripe bananas mashed
  • 1 piece egg room temperature
  • 2 tbsp peanut butter smooth
  • 1 tsp vanilla extract
  • 1 tsp cinnamon optional
  • 0.25 cup mini chocolate chips

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  • Add oats, protein powder, mashed bananas, egg, peanut butter, vanilla, and cinnamon to a mixing bowl. Stir until a thick dough forms.
  • Fold in chocolate chips and mix gently so the dough stays soft and evenly combined.
  • Scoop portions onto the tray and lightly flatten each cookie for even baking.
  • Bake for 10 to 12 minutes until the edges turn golden and the centers feel set.
  • Cool on the pan briefly, then transfer to a rack. Enjoy warm or chill before serving.

Notes

For softer cookies, bake on the lower end of the time range. For crispier edges, add a few extra minutes. Freeze baked cookies in a sealed container for quick snacks. Chill the dough if it feels sticky during assembly. Swap chocolate chips for nuts or dried fruit to customize flavors. Store at room temperature for two days or refrigerate for up to one week.
