- 1 lb vegan pulled pork-style strips seitan or soy-based
- 1 cup sugar-free BBQ sauce check labels or homemade
- 1/2 cup vegetable broth
- 1 tbsp apple cider vinegar
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp chili powder
- 1 tbsp olive oil
- Optional: 1 small onion thinly sliced
Heat olive oil in a skillet, sauté onion until soft if using.
Add vegan pulled pork strips to skillet, sear for 3-4 minutes.
Transfer to crockpot.
Mix BBQ sauce, vegetable broth, vinegar, and spices in a bowl, pour over strips.
Cover and cook on low for 8 hours, stirring halfway through.
Shred strips with forks or claws, mix well to coat in sauce.
Serve warm in lettuce wraps, keto buns, or straight from the pot.
