  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh ginger minced
  • 2 garlic cloves minced
  • 1 teaspoon red pepper flakes optional
  • ½ teaspoon black pepper
  • 2 tablespoons green onions for garnish
  • Sesame seeds for garnish

Instructions
 

  • Marinate the pork: In a mixing bowl, whisk soy sauce, rice vinegar, honey, sesame oil, ginger, garlic, and black pepper.
  • Coat and chill: Place pork in the marinade, ensuring it’s well coated. Cover and refrigerate for at least 30 minutes.
  • Preheat oven: Set your oven to 375°F (190°C) if baking.
  • Sear the pork (optional): Heat a skillet over medium-high heat, add sesame oil, and sear the pork for 3 minutes per side.
  • Cook: Transfer the pork to a baking dish and bake for 25 minutes or until the internal temperature reaches 145°F (63°C).
  • Rest and slice: Let the pork rest for 5 minutes to retain juices. Slice into medallions.
  • Garnish and serve: Sprinkle with green onions and sesame seeds before serving.
