Vegan Zucchini Fritters
Ingredients
- 2 medium zucchinis grated
- 1/4 cup chopped green onions
- 1/4 cup all-purpose flour
- 1/4 cup chickpea flour for extra protein, obviously
- 1 tbsp ground flaxseed + 2.5 tbsp water aka flax egg
- 1 garlic clove minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp baking powder
- 2 tbsp nutritional yeast for that savory “cheesy” vibe
- 2 tbsp olive oil for pan-frying
Instructions
- Grate zucchini, then squeeze out all that dramatic water using cheesecloth. Yes, it’s annoying. Do it anyway.
- In a bowl, mix flaxseed and water. Let it sit for 5 minutes. Pretend you’re letting it “develop flavor.”
- Add grated zucchini, flours, onions, garlic, seasonings, baking powder, and nutritional yeast. Stir until it acts like a batter.
- Heat oil in a pan over medium heat like you mean business.
- Scoop 2 tbsp of mixture per fritter into the pan. Flatten slightly so it knows who’s boss.
- Fry 3–4 minutes each side, until golden and fabulous.
- Drain on paper towels. Try not to eat them all before plating.
