  • 1 cup firm tofu cubes
  • ½ cup chopped carrots
  • ½ cup potatoes diced
  • ¼ cup onions
  • ¼ cup peas
  • 1 tablespoon olive oil
  • 1 teaspoon garlic paste
  • 1 teaspoon soy sauce
  • ½ teaspoon thyme
  • ½ teaspoon paprika
  • ½ teaspoon pepper
  • ½ teaspoon salt
  • cups water or vegetable broth
  • 1 tablespoon lemon juice
  • Fresh coriander for garnish

Instructions
 

  • Heat oil in a pot.
  • Add onions and garlic paste.
  • Cook 2 minutes.
  • Add tofu cubes and soy sauce.
  • Stir and cook 3 minutes.
  • Add carrots, potatoes, and peas.
  • Mix well.
  • Add thyme, paprika, salt, and pepper.
  • Pour in broth or water.
  • Simmer 15 minutes.
  • Add lemon juice.
  • Garnish with coriander.
