  • 1 tablespoon oil
  • ½ cup chopped onions
  • ½ cup sliced carrots
  • ½ cup chopped potatoes
  • ½ cup chopped bell peppers
  • 1 teaspoon garlic paste
  • 1 teaspoon chili powder
  • ½ teaspoon turmeric
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 cups vegetable broth
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • 1 teaspoon lemon juice
  • 2 tablespoons chopped coriander

Instructions
 

  • Heat oil in a pan.
  • Add onions and sauté 3 minutes.
  • Add garlic paste.
  • Add carrots and potatoes.
  • Add bell peppers.
  • Stir well.
  • Add chili powder and turmeric.
  • Add paprika.
  • Add salt and pepper.
  • Mix in vegan meatballs.
  • Add thyme and oregano.
  • Pour vegetable broth.
  • Simmer 18 minutes.
  • Add lemon juice.
  • Garnish with coriander.
