Protein Mashed Potatoes Recipe
Ingredients
- Potatoes peeled and cubed: 2 cups
- Silken tofu: ½ cup
- Unsweetened almond milk: ¼ cup
- Nutritional yeast: 2 tbsp
- Olive oil or vegan butter: 1 tbsp
- Garlic powder: ½ tsp
- Salt: ¾ tsp
- Black pepper: ½ tsp
- Fresh chives or parsley chopped: 1 tbsp
Instructions
- Add potatoes to a saucepan, cover with water, and bring to a boil.
- Cook 15–18 minutes until fork-tender, then drain completely.
- Add potatoes to a bowl with silken tofu and almond milk.
- Mash until smooth and creamy with minimal lumps.
- Stir in nutritional yeast, oil, garlic powder, salt, and pepper.
