Ingredients
Potatoes
peeled and cubed: 2 cups
Silken tofu: ½ cup
Unsweetened almond milk: ¼ cup
Nutritional yeast: 2 tbsp
Olive oil or vegan butter: 1 tbsp
Garlic powder: ½ tsp
Salt: ¾ tsp
Black pepper: ½ tsp
Fresh chives or parsley
chopped: 1 tbsp
Instructions
Add potatoes to a saucepan, cover with water, and bring to a boil.
Cook 15–18 minutes until fork-tender, then drain completely.
Add potatoes to a bowl with silken tofu and almond milk.
Mash until smooth and creamy with minimal lumps.
Stir in nutritional yeast, oil, garlic powder, salt, and pepper.
Adjust consistency with extra milk if needed.
Garnish with herbs and serve warm.
