Ingredients
  

  • Potatoes peeled and cubed: 2 cups
  • Silken tofu: ½ cup
  • Unsweetened almond milk: ¼ cup
  • Nutritional yeast: 2 tbsp
  • Olive oil or vegan butter: 1 tbsp
  • Garlic powder: ½ tsp
  • Salt: ¾ tsp
  • Black pepper: ½ tsp
  • Fresh chives or parsley chopped: 1 tbsp

Instructions
 

  • Add potatoes to a saucepan, cover with water, and bring to a boil.
  • Cook 15–18 minutes until fork-tender, then drain completely.
  • Add potatoes to a bowl with silken tofu and almond milk.
  • Mash until smooth and creamy with minimal lumps.
  • Stir in nutritional yeast, oil, garlic powder, salt, and pepper.
  • Adjust consistency with extra milk if needed.
  • Garnish with herbs and serve warm.
