  • 1/2 cup vanilla protein powder whey or plant based
  • 1/2 cup peanut butter smooth
  • 1/3 cup honey or maple syrup
  • 1 large egg room temperature
  • 1/3 cup mini chocolate chips optional

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  • Whisk oat flour and protein powder in a bowl until evenly mixed and fluffy.
  • Add peanut butter, honey, and egg. Stir until a soft dough forms, then fold in chocolate chips.
  • Scoop portions onto the tray and gently flatten. The dough should feel soft but hold its shape.
  • Bake until edges turn golden and centers look set, about 10 to 12 minutes. Cool completely before serving.

Notes

For softer cookies, bake on the lower end of the time range. For crispier edges, add an extra minute or two. Freeze baked cookies in an airtight container for up to three months. Chill dough briefly if it feels sticky during assembly. Swap peanut butter with almond butter or add cinnamon for flavor variety. Store at room temperature for three days or refrigerate for one week.
