Keto Beef & Zucchini Stir-Fry
Ingredients
- 1 lb beef steak or ground
- 2 medium zucchinis sliced
- 2 tbsp olive oil
- 2 tbsp soy sauce or coconut aminos
- 1 garlic clove minced
- 1 tsp ginger grated
- 1 tbsp sesame oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add beef and cook until browned (about 5–7 minutes).
- Remove beef from the pan, and set aside.
- In the same pan, add sesame oil, garlic, and ginger. Sauté for 1 minute.
- Add zucchini and cook until tender, about 3–4 minutes.
- Return beef to the pan, add soy sauce, and stir to combine.
- Season with salt and pepper to taste, and serve immediately.
