Ingredients
  

  • 1 lb beef steak or ground
  • 2 medium zucchinis sliced
  • 2 tbsp olive oil
  • 2 tbsp soy sauce or coconut aminos
  • 1 garlic clove minced
  • 1 tsp ginger grated
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add beef and cook until browned (about 5–7 minutes).
  • Remove beef from the pan, and set aside.
  • In the same pan, add sesame oil, garlic, and ginger. Sauté for 1 minute.
  • Add zucchini and cook until tender, about 3–4 minutes.
  • Return beef to the pan, add soy sauce, and stir to combine.
  • Season with salt and pepper to taste, and serve immediately.
