- 1 lb beef steak or ground
- 2 medium zucchinis sliced
- 2 tbsp olive oil
- 2 tbsp soy sauce or coconut aminos
- 1 garlic clove minced
- 1 tsp ginger grated
- 1 tbsp sesame oil
- Salt and pepper to taste
Heat olive oil in a skillet over medium heat.
Add beef and cook until browned (about 5–7 minutes).
Remove beef from the pan, and set aside.
In the same pan, add sesame oil, garlic, and ginger. Sauté for 1 minute.
Add zucchini and cook until tender, about 3–4 minutes.
Return beef to the pan, add soy sauce, and stir to combine.
Season with salt and pepper to taste, and serve immediately.
