Ingredients
  

  • 4 keto-friendly tortillas almond flour or coconut flour
  • 200 g vegan ground beef soy-based or seitan
  • 1 tablespoon olive oil
  • ½ onion finely chopped
  • 2 garlic cloves minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 cup shredded vegan cheddar cheese
  • 1 tablespoon fresh cilantro chopped (for garnish)
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a non-stick skillet over medium heat. Add onion and garlic, cooking until fragrant.
  • Stir in vegan ground beef, breaking it apart. Cook for 5–7 minutes until browned.
  • Season with cumin, chili powder, smoked paprika, salt, and pepper. Stir well and set aside.
  • Place a tortilla on the skillet and sprinkle with shredded vegan cheese. Add some of the beef mixture.
  • Top with another tortilla and press down lightly. Cook for 3–4 minutes on each side until crispy.
  • Repeat for remaining tortillas.
  • Slice each quesadilla into wedges and garnish with fresh cilantro. Serve hot and enjoy the keto goodness.
