Garlic Parmesan Sweet Potatoes Recipe
Ingredients
- Sweet potatoes – 4 medium about 2 lbs, peeled and cubed
- Olive oil – 3 tbsp
- Garlic – 4 cloves minced
- Parmesan vegan optional – ½ cup, finely grated
- Fresh parsley – 2 tbsp chopped
- Salt – 1 tsp
- Black pepper – ½ tsp
Instructions
- Preheat oven to 400°F (200°C).
- Line baking sheet with parchment paper.
- Toss cubed sweet potatoes with olive oil, garlic, salt, and pepper.
- Spread evenly on baking sheet.
- Roast 25–30 minutes, stirring halfway.
- Remove, sprinkle parmesan and parsley, toss gently, and serve hot.
