- Sweet potatoes – 4 medium about 2 lbs, peeled and cubed
- Olive oil – 3 tbsp
- Garlic – 4 cloves minced
- Parmesan vegan optional – ½ cup, finely grated
- Fresh parsley – 2 tbsp chopped
- Salt – 1 tsp
- Black pepper – ½ tsp
Preheat oven to 400°F (200°C).
Line baking sheet with parchment paper.
Toss cubed sweet potatoes with olive oil, garlic, salt, and pepper.
Spread evenly on baking sheet.
Roast 25–30 minutes, stirring halfway.
Remove, sprinkle parmesan and parsley, toss gently, and serve hot.
