Ingredients
  

  • Sweet potatoes – 4 medium about 2 lbs, peeled and cubed
  • Olive oil – 3 tbsp
  • Garlic – 4 cloves minced
  • Parmesan vegan optional – ½ cup, finely grated
  • Fresh parsley – 2 tbsp chopped
  • Salt – 1 tsp
  • Black pepper – ½ tsp

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Line baking sheet with parchment paper.
  • Toss cubed sweet potatoes with olive oil, garlic, salt, and pepper.
  • Spread evenly on baking sheet.
  • Roast 25–30 minutes, stirring halfway.
  • Remove, sprinkle parmesan and parsley, toss gently, and serve hot.
