  • ½ cup onions
  • ½ cup tomatoes
  • ½ cup diced potatoes
  • 1 tablespoon oil
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 1 teaspoon curry powder
  • ½ teaspoon turmeric
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 cup coconut milk
  • 1 cup water
  • Fresh coriander

Instructions
 

  • Heat oil in a pot.
  • Add onions, ginger, and garlic.
  • Cook 2 minutes.
  • Add tomatoes and potatoes.
  • Stir and cook 3 minutes.
  • Add vegan beef.
  • Add curry powder, turmeric, chili powder, salt, and pepper.
  • Mix well.
  • Add coconut milk and water.
  • Simmer 20 minutes until thick.
  • Garnish with coriander.
