Keto Chicken Coconut Curry
Ingredients
- 4 chicken breasts cut into bite-sized pieces
- 1 can 14 oz coconut milk
- 2 tbsp olive oil
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 tbsp fresh ginger grated
- 1 tbsp curry powder
- 1 tsp turmeric
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1/2 cup chicken broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chopped onion, garlic, and grated ginger. Sauté for 2 minutes.
