Lentil Soup Recipe
Ingredients
- 1 cup red lentils
- 1 tablespoon olive oil
- 1 small onion chopped
- 1 carrot diced
- 1 tomato chopped
- 2 garlic cloves minced
- ½ teaspoon turmeric
- ½ teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon pepper
- 3 cups water or vegetable broth
- 1 tablespoon lemon juice
- 1 tablespoon chopped coriander
Instructions
- Heat oil in a pot.
- Add onion.
- Stir two minutes.
- Add carrot.
- Add tomato.
- Cook three minutes.
- Add garlic.
- Add turmeric.
- Add cumin.
- Mix gently.
- Add lentils.
- Add water or broth.
- Add salt.
- Add pepper.
- Stir well.
- Cover pot.
- Cook twenty minutes.
- Open lid.
- Add lemon juice.
- Add coriander.
