- 1 tablespoon olive oil
- 1 small onion chopped
- 1 carrot diced
- 1 tomato chopped
- 2 garlic cloves minced
- ½ teaspoon turmeric
- ½ teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon pepper
- 3 cups water or vegetable broth
- 1 tablespoon lemon juice
- 1 tablespoon chopped coriander
Heat oil in a pot.
Add onion.
Stir two minutes.
Add carrot.
Add tomato.
Cook three minutes.
Add garlic.
Add turmeric.
Add cumin.
Mix gently.
Add lentils.
Add water or broth.
Add salt.
Add pepper.
Stir well.
Cover pot.
Cook twenty minutes.
Open lid.
Add lemon juice.
Add coriander.
