  • 2 cups fresh spinach leaves
  • 4 slices vegan cheese or ½ cup shredded vegan cheese
  • 2 tablespoons vegan butter or margarine
  • 1 teaspoon olive oil
  • Pinch of salt
  • ¼ teaspoon garlic powder

For Serving:

Instructions
 

  • Heat olive oil in a pan and sauté spinach until wilted.
  • Sprinkle with a pinch of salt and garlic powder, then remove from heat.
  • Spread vegan butter on one side of each bread slice.
  • Place one slice, buttered side down, on a skillet over medium heat.
  • Layer vegan cheese, spinach, and the second bread slice, buttered side up.
  • Grill 3–4 minutes until golden and crisp.
  • Flip carefully and cook the other side until cheese melts beautifully.
  • Slice diagonally and serve immediately.
