For the Sandwich:
- 4 slices bread whole wheat or sourdough
- 2 cups fresh spinach leaves
- 4 slices vegan cheese or ½ cup shredded vegan cheese
- 2 tablespoons vegan butter or margarine
- 1 teaspoon olive oil
- Pinch of salt
- ¼ teaspoon garlic powder
For Serving:
- Tomato soup or chili flakes optional but iconic
Heat olive oil in a pan and sauté spinach until wilted.
Sprinkle with a pinch of salt and garlic powder, then remove from heat.
Spread vegan butter on one side of each bread slice.
Place one slice, buttered side down, on a skillet over medium heat.
Layer vegan cheese, spinach, and the second bread slice, buttered side up.
Grill 3–4 minutes until golden and crisp.
Flip carefully and cook the other side until cheese melts beautifully.
Slice diagonally and serve immediately.
