22g Protein Salmon Sweet Potato Recipe
Ingredients
- Vegan salmon fillets soy or pea protein based: 220 g
- Sweet potato peeled and cubed: 2 cups
- Olive oil: 2 tbsp
- Garlic powder: ½ tsp
- Smoked paprika: 1 tsp
- Black pepper: ½ tsp
- Salt: ¾ tsp
- Lemon juice: 1½ tbsp
- Dijon mustard: 1 tsp
- Fresh dill or parsley chopped: 2 tbsp
Instructions
- Preheat oven to 200°C.
- Add sweet potato using 2 cups to a bowl.
- Toss with 1 tbsp olive oil, paprika, salt, and pepper.
- Spread evenly on a baking tray.
- Roast 20 minutes, flipping once until golden.
- Heat remaining oil in a pan over medium heat.
- Add vegan salmon using 220 g carefully.
- Season with garlic powder, salt, and pepper.
- Cook 3–4 minutes per side until heated and lightly crisp.
- Mix lemon juice and mustard in a small bowl.
- Drizzle sauce over salmon.
- Serve salmon alongside roasted sweet potatoes.
- Garnish with fresh herbs and serve warm.
