Ingredients
  

  • 2 cups grated zucchini
  • 1/2 cup vegan feta crumbled
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 tbsp ground flaxseed + 5 tbsp water vegan egg substitute
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • Olive oil for cooking

Instructions
 

  • Preheat oven to 375°F if baking, or heat skillet over medium heat.
  • Mix flaxseed with water; let thicken 5 minutes.
  • Combine zucchini, vegan feta, onion, breadcrumbs, spices, and flax mixture.
  • Form mixture into 4 patties, 1/2 inch thick.
  • Cook in skillet with olive oil 4–5 minutes per side, or bake 20 minutes until golden.
  • Serve on buns with greens, roasted peppers, or vegan mayo.
