Chicken

  • 1.5 pounds boneless chicken thighs cut into chunks
  • 1 teaspoon salt divided
  • 0.5 teaspoon black pepper freshly ground
  • 1 tablespoon olive oil for cooking

Curry Sauce

  • 1 piece yellow onion diced
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons curry powder adjust to taste
  • 1 teaspoon ground turmeric warm flavor
  • 1 cup tomato sauce smooth texture
  • 1 can coconut milk full fat

For Serving

Instructions
 

  • Season chicken with half the salt and black pepper until evenly coated.
  • Heat olive oil in a large pot over medium heat. Cook chicken until lightly golden outside.
  • Add onion, garlic, and ginger. Stir frequently until softened and fragrant without burning.
  • Mix in curry powder and turmeric. Cook briefly so the spices release deeper flavor.
  • Pour in tomato sauce and coconut milk. Simmer gently until the sauce thickens and chicken turns tender.
  • Serve curry over warm rice with cilantro and lime wedges for bright flavor contrast.

Notes

Simmer longer for thicker sauce or shorten cooking slightly for lighter texture. Freeze curry separately from rice for easier reheating later. Stir gently during simmering to maintain creamy consistency. Customize flavors with spinach, potatoes, peas, or extra chili flakes. Store leftovers refrigerated for up to four days and reheat slowly to prevent sauce separation.
