  • 2 cups vegan chicken strips
  • 3 cups mixed greens
  • 1/2 cup bell peppers sliced
  • 1/2 cup zucchini sliced
  • 1/2 cup cherry tomatoes halved

  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Sauté vegan chicken strips until lightly browned and warmed through.
  • Add bell peppers, zucchini, and cherry tomatoes; cook for 3–4 minutes until tender.
  • Toss warm vegetables and vegan chicken with fresh greens in a mixing bowl.
  • Drizzle lemon juice, season with salt and pepper, and toss gently.
  • Garnish with fresh parsley and serve immediately for optimal warmth and flavor.
