- 2 medium zucchinis grated
- 1/2 cup chickpea flour or your favorite flour
- 1/4 cup nutritional yeast for that cheesy vibe
- 1/4 cup chopped fresh parsley
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1/4 tsp sea salt
- 2 tbsp olive oil plus more for drizzling
- 2 tbsp plant-based milk almond or oat works great
- 1 tbsp lemon juice
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Grate the zucchinis and place them in a clean kitchen towel. Squeeze out excess moisture.
In a mixing bowl, combine the grated zucchini, chickpea flour, nutritional yeast, parsley, garlic powder, onion powder, salt, and pepper.
Add the plant-based milk, lemon juice, and olive oil to the mixture. Stir until everything’s well combined.
Scoop the mixture into spoonfuls and form small fritters. Place them on the prepared baking sheet.
Lightly drizzle with more olive oil. Bake for 15-20 minutes, flipping halfway through until golden brown and crispy.
Serve hot with your favorite dipping sauce. Enjoy!
