Ingredients
  

  • 2 medium zucchinis grated
  • 1/2 cup chickpea flour or your favorite flour
  • 1/4 cup nutritional yeast for that cheesy vibe
  • 1/4 cup chopped fresh parsley
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/4 tsp sea salt
  • 2 tbsp olive oil plus more for drizzling
  • 2 tbsp plant-based milk almond or oat works great
  • 1 tbsp lemon juice

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Grate the zucchinis and place them in a clean kitchen towel. Squeeze out excess moisture.
  • In a mixing bowl, combine the grated zucchini, chickpea flour, nutritional yeast, parsley, garlic powder, onion powder, salt, and pepper.
  • Add the plant-based milk, lemon juice, and olive oil to the mixture. Stir until everything’s well combined.
  • Scoop the mixture into spoonfuls and form small fritters. Place them on the prepared baking sheet.
  • Lightly drizzle with more olive oil. Bake for 15-20 minutes, flipping halfway through until golden brown and crispy.
  • Serve hot with your favorite dipping sauce. Enjoy!
