Vegan Sweet Potato Croquettes

These vegan sweet potato croquettes are crispy, delicious, and full of flavor. A perfect snack or appetizer.

- 2 medium sweet potatoes peeled and diced
- 1/2 cup breadcrumbs gluten-free if needed
- 1/4 cup cooked chickpeas mashed
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 tbsp fresh parsley chopped (optional)
Preheat the oven to 375°F (190°C).
Boil the sweet potatoes until tender, about 10-12 minutes.
Mash the cooked sweet potatoes and chickpeas in a bowl.
Add breadcrumbs, olive oil, garlic powder, paprika, salt, and pepper. Mix well.
Shape the mixture into small croquettes, about the size of a golf ball.
Place the croquettes on a baking sheet.
Bake for 20-25 minutes, flipping halfway, until golden and crispy.
