These vegan sweet potato croquettes are crispy, delicious, and full of flavor. A perfect snack or appetizer.

Ingredients
  

  • 2 medium sweet potatoes peeled and diced
  • 1/2 cup breadcrumbs gluten-free if needed
  • 1/4 cup cooked chickpeas mashed
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp fresh parsley chopped (optional)

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Boil the sweet potatoes until tender, about 10-12 minutes.
  • Mash the cooked sweet potatoes and chickpeas in a bowl.
  • Add breadcrumbs, olive oil, garlic powder, paprika, salt, and pepper. Mix well.
  • Shape the mixture into small croquettes, about the size of a golf ball.
  • Place the croquettes on a baking sheet.
  • Bake for 20-25 minutes, flipping halfway, until golden and crispy.
