- 1 sheet of puff pastry store-bought or homemade
- 2 cups fresh spinach chopped
- 1/2 cup cashews chopped
- 1/4 cup vegan cream cheese
- 1/4 cup nutritional yeast
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil for sautéing
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Heat olive oil in a frying pan and sauté chopped spinach until wilted, about 3–4 minutes.
Stir in chopped cashews, vegan cream cheese, nutritional yeast, garlic powder, salt, and pepper. Cook for another 2 minutes.
Unfold puff pastry and cut into 12 squares.
Spoon the spinach mixture onto the center of each square.
Fold the corners over and seal the edges to form a pocket.
Place on the baking sheet and bake for 20–25 minutes, or until golden brown.
Let cool slightly before devouring.
