Ingredients
  

  • 1 sheet of puff pastry store-bought or homemade
  • 2 cups fresh spinach chopped
  • 1/2 cup cashews chopped
  • 1/4 cup vegan cream cheese
  • 1/4 cup nutritional yeast
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil for sautéing

Instructions
 

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Heat olive oil in a frying pan and sauté chopped spinach until wilted, about 3–4 minutes.
  • Stir in chopped cashews, vegan cream cheese, nutritional yeast, garlic powder, salt, and pepper. Cook for another 2 minutes.
  • Unfold puff pastry and cut into 12 squares.
  • Spoon the spinach mixture onto the center of each square.
  • Fold the corners over and seal the edges to form a pocket.
  • Place on the baking sheet and bake for 20–25 minutes, or until golden brown.
  • Let cool slightly before devouring.
