Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup coconut oil melted
  • 1/2 cup granulated sugar
  • 1 tablespoon matcha powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon almond milk or other plant-based milk
  • 1/4 cup shredded coconut optional for texture

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, mix coconut oil, sugar, and vanilla extract.
  • In another bowl, whisk together flour, matcha powder, baking soda, and salt.
  • Slowly add dry ingredients to wet ingredients, mixing until smooth.
  • Stir in almond milk and shredded coconut (if using).
  • Scoop dough onto the baking sheet, spacing cookies 2 inches apart.
  • Bake for 12-15 minutes until edges are golden.
  • Allow to cool on the sheet before transferring to a cooling rack.
