- 1/2 cup coconut oil melted
- 1/2 cup granulated sugar
- 1 tablespoon matcha powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 tablespoon almond milk or other plant-based milk
- 1/4 cup shredded coconut optional for texture
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, mix coconut oil, sugar, and vanilla extract.
In another bowl, whisk together flour, matcha powder, baking soda, and salt.
Slowly add dry ingredients to wet ingredients, mixing until smooth.
Stir in almond milk and shredded coconut (if using).
Scoop dough onto the baking sheet, spacing cookies 2 inches apart.
Bake for 12-15 minutes until edges are golden.
Allow to cool on the sheet before transferring to a cooling rack.
