Vegan Chocolate Coconut Bites

For the Bites
- 1 ½ cups shredded unsweetened coconut
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- 2 tablespoons coconut oil melted
- ⅛ teaspoon salt
For the Chocolate Coating
- ¾ cup dark chocolate dairy-free, melted
- 1 teaspoon coconut oil
Step 1: Make the Coconut Filling
Mix shredded coconut, maple syrup, vanilla extract, and salt in a bowl.
Add melted coconut oil and stir until the mixture sticks together.
Scoop and roll into small balls (about 1-inch wide).
Place on a parchment-lined baking sheet and freeze for 10 minutes.
Step 2: Prepare the Chocolate Coating
Melt chocolate with coconut oil using a microwave or double boiler.
Stir until smooth and glossy.
Step 3: Coat & Set
Dip each coconut bite into melted chocolate, ensuring full coverage.
Let excess chocolate drip off, then return to the parchment-lined sheet.
Chill in the fridge for 5 minutes until set.
