Ingredients
  

For the Dough:

  • 2 1/4 tsp active dry yeast 1 packet
  • 1 cup warm water not boiling, you’re not making tea
  • 1 tbsp brown sugar
  • 1 tsp salt
  • 2 1/2 cups all-purpose flour
  • 1 tbsp olive oil

For the Filling:

  • 1/2 cup vegan mozzarella cheese shredded or cubed

For Boiling:

  • 1/4 cup baking soda
  • 6 cups water
  • For Topping:
  • Coarse salt go ahead, be generous
  • 1 tbsp melted vegan butter optional but fabulous

Instructions
 

  • Mix yeast, warm water, and sugar in a bowl. Let it foam for 5 minutes like it’s doing skincare.
  • Stir in salt, flour, and oil. Mix into a soft dough. Knead it like you’re releasing your inbox rage.
  • Let the dough rest, covered, for 10 minutes. Scroll Instagram. Pretend you're researching food styling.
  • Preheat oven to 400°F and line a tray with parchment.
  • Divide dough into 20 pieces. Flatten each and place a little vegan cheese in the center.
  • Pinch closed, roll into a ball. Pretend each one is a tiny, delicious secret.
  • In a saucepan, bring water to a boil. Add baking soda carefully—it fizzes like your drama group chat.
  • Drop a few dough balls in at a time, boil 20 seconds, then remove with a slotted spoon.
