Ingredients

For the Batter:

  • 1 medium cauliflower cut into florets
  • ¾ cup all-purpose flour or chickpea flour for gluten-free
  • ¾ cup unsweetened plant milk
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper

For the BBQ Coating:

  • 1 cup BBQ sauce store-bought or homemade
  • 1 tbsp maple syrup optional, for extra sweetness
  • 1 tsp apple cider vinegar
  • ½ tsp cayenne pepper optional, for heat

Instructions

Step 1: Prepare the Batter

  • Preheat the oven to 425°F and line a baking sheet with parchment paper.
  • In a bowl, whisk together flour, plant milk, garlic powder, paprika, salt, and black pepper.
  • Coat each cauliflower floret in the batter, letting the excess drip off.

Step 2: Bake the Cauliflower

  • Arrange the florets on the baking sheet in a single layer.
  • Bake for 20 minutes, flipping halfway through for even crispiness.

Step 3: Add the BBQ Sauce

  • In a bowl, mix BBQ sauce, maple syrup, apple cider vinegar, and cayenne.
  • Brush or toss the baked cauliflower in the BBQ sauce mixture.
  • Return to the oven and bake for another 15 minutes.

Step 4: Serve and Enjoy

  • Let cool slightly before serving (unless you enjoy burning your mouth).
  • Pair with vegan ranch, celery sticks, or just eat them straight off the tray.
