Ingredients
  

For the BBQ Jackfruit:

  • 2 cans 14 oz each young jackfruit, drained and shredded
  • 1 tbsp olive oil to help it crisp up
  • 1 small onion diced (adds depth)
  • 2 cloves garlic minced (flavor bomb)
  • 1 cup BBQ sauce your favorite, but make it good
  • 1 tsp smoked paprika brings the heat
  • ½ tsp cumin adds warmth
  • ½ tsp salt because balance
  • ¼ tsp black pepper a little kick
  • ¼ cup vegetable broth to keep it juicy

For the Slaw:

  • 1 cup shredded cabbage colorful crunch
  • ½ cup shredded carrots extra texture
  • 2 tbsp vegan mayo creamy goodness
  • 1 tbsp apple cider vinegar tangy perfection
  • ½ tsp salt to season
  • ¼ tsp black pepper just a pinch

For Assembly:

  • 4 sandwich buns to hold it all together
  • 1 tbsp vegan butter for toasting

Instructions
 

  • Heat the oil in a skillet over medium heat. Sauté the onion until soft, about 3 minutes. Add garlic and cook for another minute.
  • Toss in the shredded jackfruit and cook for 5 minutes, stirring occasionally. Use a fork to pull it apart into shreds.
  • Add the BBQ sauce, paprika, cumin, salt, and pepper. Stir well, then pour in the broth to keep things juicy.
  • Cover and simmer for 15 minutes, stirring occasionally. Let the jackfruit soak up all that smoky BBQ goodness.
  • While that cooks, prepare the slaw. Mix cabbage, carrots, mayo, vinegar, salt, and pepper in a bowl. Toss to combine.
  • Toast the buns in a skillet with a little vegan butter until golden brown.
  • Assemble the sandwiches by piling BBQ jackfruit onto the buns, topping with slaw, and closing with the top bun.
  • Serve immediately and get ready for some serious sandwich satisfaction.
