Ingredients

  • ½ cup tempeh coconut bacon, or smoky tofu strips
  • 1 tbsp soy sauce for umami magic
  • ½ tbsp maple syrup because balance
  • ½ tsp smoked paprika for that smoky kick
  • ¼ tsp black pepper adds a little heat

For the Sandwich:

  • 4 slices sourdough or whole-grain bread toasted to perfection
  • 2 tbsp vegan mayo store-bought or homemade
  • 1 large tomato sliced thick
  • ½ cup crisp lettuce because texture matters

Instructions
 

  • Mix soy sauce, maple syrup, smoked paprika, and black pepper in a small bowl.
  • Marinate vegan bacon in the mixture for 5 minutes.
  • Heat a frying pan over medium and cook bacon for 3-4 minutes per side.
  • Toast bread until golden brown.
  • Spread vegan mayo generously on each slice.
  • Layer crispy bacon, tomato slices, and fresh lettuce.
  • Close the sandwich and press lightly to hold everything together.
  • Slice in half and enjoy immediately.
