For the Soup:
- 6 large ripe tomatoes chopped
- 2 onions thinly sliced
- 3 garlic cloves minced
- 1 tablespoon olive oil
- 2 cups vegetable broth
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon dried basil
- ½ teaspoon smoked paprika
- ½ cup coconut milk or cashew cream
- 1 teaspoon maple syrup optional
For Garnish:

Heat olive oil in a large pot over medium heat.
Add sliced onions and cook slowly for 10–12 minutes, stirring occasionally.
Once golden and caramelized, add garlic and cook for one minute.
Stir in tomatoes, basil, paprika, salt, and pepper.
Cook for 10 minutes until tomatoes soften.
Pour in vegetable broth and simmer for another 10 minutes.
Blend the soup until smooth and creamy.
Stir in coconut milk and maple syrup.
Adjust seasoning and serve hot, garnished with fresh basil and olive oil.
