Ingredients
  

For the Soup:

  • 6 large ripe tomatoes chopped
  • 2 onions thinly sliced
  • 3 garlic cloves minced
  • 1 tablespoon olive oil
  • 2 cups vegetable broth
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ½ cup coconut milk or cashew cream
  • 1 teaspoon maple syrup optional

For Garnish:

  • Fresh basil leaves
  • Drizzle of olive oil

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add sliced onions and cook slowly for 10–12 minutes, stirring occasionally.
  • Once golden and caramelized, add garlic and cook for one minute.
  • Stir in tomatoes, basil, paprika, salt, and pepper.
  • Cook for 10 minutes until tomatoes soften.
  • Pour in vegetable broth and simmer for another 10 minutes.
  • Blend the soup until smooth and creamy.
  • Stir in coconut milk and maple syrup.
  • Adjust seasoning and serve hot, garnished with fresh basil and olive oil.
