Ingredients
  

  • 2 cups cooked white rice
  • 14 oz firm tofu cubed
  • 1 tbsp sesame oil
  • 1 cup broccoli florets
  • ½ cup shredded carrots
  • ½ cup sliced bell pepper
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tsp rice vinegar
  • 1 tsp grated ginger
  • 2 tbsp sliced green onions
  • 1 tsp sesame seeds

Instructions
 

  • Heat sesame oil in a skillet over medium heat.
  • Add cubed tofu and cook 6 minutes until golden.
  • Add broccoli, carrots, and bell pepper, cook 4 minutes.
  • Stir soy sauce, maple syrup, rice vinegar, and ginger into skillet.
  • Cook mixture 3 minutes until sauce thickens slightly.
  • Divide cooked rice into serving bowls.
  • Spoon tofu mixture over rice.
  • Garnish with green onions and sesame seeds.
