Ingredients
  

Mutton Marinade

  • 2 pounds mutton cut into bite-sized pieces
  • 1 cup plain yogurt for tender texture
  • 1 tablespoon garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 teaspoon salt divided
  • 1 teaspoon garam masala warm flavor

Fry Masala

  • 2 tablespoons olive oil for frying
  • 1 piece yellow onion thinly sliced
  • 1 tablespoon curry powder adjust to taste
  • 0.5 teaspoon black pepper freshly ground
  • 10 pieces curry leaves fresh
  • 1 piece green chili sliced optional

For Serving

  • 2 tablespoons fresh cilantro chopped
  • 1 piece lemon cut into wedges
  • 3 cups cooked basmati rice warm

Instructions
 

  • Mix yogurt, garlic, ginger, half the salt, and garam masala in a bowl. Coat mutton evenly.
  • Cook marinated mutton until tender using a pressure cooker or slow simmering method.
  • Heat olive oil in a large skillet over medium heat. Cook onions until deeply golden and fragrant.
  • Add curry powder, black pepper, curry leaves, and green chili. Stir briefly for bold flavor.
  • Add cooked mutton and fry until edges turn slightly crispy while the inside stays tender.
  • Serve warm with cilantro, lemon wedges, and rice for bright flavor and comforting texture.

Notes

Fry mutton longer for crispier edges or reduce cooking slightly for softer texture. Freeze cooked mutton separately for easier reheating later. Stir gently during frying to keep pieces intact. Customize flavors with coconut slices, extra chili, black pepper, or fennel seeds. Store leftovers refrigerated for up to four days and reheat slowly in a skillet for best texture.
