- Sweet potatoes – 3 large about 2 lbs, cut into wedges
- Olive oil – 3 tbsp
- Chipotle powder – 1 tsp
- Smoked paprika – ½ tsp
- Garlic powder – ½ tsp
- Salt – 1 tsp
- Black pepper – ½ tsp
- Lime wedges – for serving
Preheat oven to 425°F (220°C).
Line baking sheet with parchment paper.
Toss sweet potato wedges with oil, chipotle, paprika, garlic, salt, and pepper.
Spread evenly on baking sheet.
Roast 20 minutes, flip, and roast another 15 minutes until crisp.
Serve hot with lime wedges.
