Ingredients
  

  • 2 medium red onions thinly sliced
  • 1 cup white vinegar
  • 1/2 cup water
  • 1 tablespoon sugar
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black peppercorns
  • 1 teaspoon chili flakes adjust to your spice level
  • Optional: 1 garlic clove sliced, 1/2 teaspoon mustard seeds

Instructions
 

  • Slice the onions: Thinly slice the onions and place them in a jar or container.
  • Make the brine: Heat vinegar, water, sugar, salt, peppercorns, and chili flakes in a saucepan over medium heat. Stir until sugar dissolves.
  • Pour and soak: Remove from heat and immediately pour the hot brine over the onions. Press the onions down to submerge.
  • Cool and store: Allow them to cool to room temperature, seal the jar, and refrigerate for at least 1 hour (or overnight for best flavor).
  • Serve: Add these fiery onions to tacos, sandwiches, or anything needing a spicy punch.
