- 1 cup white vinegar
- 1/2 cup water
- 1 tablespoon sugar
- 1 1/2 teaspoons salt
- 1/2 teaspoon black peppercorns
- 1 teaspoon chili flakes adjust to your spice level
- Optional: 1 garlic clove sliced, 1/2 teaspoon mustard seeds
Slice the onions: Thinly slice the onions and place them in a jar or container.
Make the brine: Heat vinegar, water, sugar, salt, peppercorns, and chili flakes in a saucepan over medium heat. Stir until sugar dissolves.
Pour and soak: Remove from heat and immediately pour the hot brine over the onions. Press the onions down to submerge.
Cool and store: Allow them to cool to room temperature, seal the jar, and refrigerate for at least 1 hour (or overnight for best flavor).
