- 8 oz rice or wheat noodles
- 1 cup pineapple chunks
- 2 cups mixed vegetables bell peppers, carrots, snap peas
- 2 garlic cloves minced
- 1 tsp grated ginger
- 3 tbsp soy sauce or tamari
- 2 tbsp rice vinegar
- 1 tbsp maple syrup or agave
- 1 tsp chili flakes optional
- 1 tbsp sesame oil
- 2 tbsp chopped cilantro or green onions for garnish
Cook noodles according to package instructions; drain and set aside.
Heat sesame oil in a wok over medium-high heat.
Sauté garlic and ginger until fragrant, about 1 minute.
Add vegetables and pineapple, stir-fry 3–4 minutes until tender-crisp.
Mix soy sauce, rice vinegar, maple syrup, and chili flakes; pour over noodles.
Toss to coat evenly and cook 1–2 more minutes.
Garnish with fresh cilantro or green onions; serve immediately.
