Ingredients
  

  • 8 oz rice or wheat noodles
  • 1 cup pineapple chunks
  • 2 cups mixed vegetables bell peppers, carrots, snap peas
  • 2 garlic cloves minced
  • 1 tsp grated ginger
  • 3 tbsp soy sauce or tamari
  • 2 tbsp rice vinegar
  • 1 tbsp maple syrup or agave
  • 1 tsp chili flakes optional
  • 1 tbsp sesame oil
  • 2 tbsp chopped cilantro or green onions for garnish

Instructions
 

  • Cook noodles according to package instructions; drain and set aside.
  • Heat sesame oil in a wok over medium-high heat.
  • Sauté garlic and ginger until fragrant, about 1 minute.
  • Add vegetables and pineapple, stir-fry 3–4 minutes until tender-crisp.
  • Mix soy sauce, rice vinegar, maple syrup, and chili flakes; pour over noodles.
  • Toss to coat evenly and cook 1–2 more minutes.
  • Garnish with fresh cilantro or green onions; serve immediately.
