- 8 oz noodles rice, wheat, or soba
- 4 cups fresh spinach washed
- 2 garlic cloves minced
- 1 tsp grated ginger
- 2 tbsp soy sauce or tamari
- 1 tbsp sesame oil
- 1 tsp chili flakes optional
- 2 tbsp water to loosen sauce if needed
- 2 tbsp chopped green onions for garnish
Cook noodles according to package instructions; drain and set aside.
Heat sesame oil in a wok over medium-high heat.
Sauté garlic and ginger for 1 minute until fragrant.
Add spinach and stir-fry until wilted, about 2–3 minutes.
Toss in cooked noodles, soy sauce, and chili flakes; stir until evenly coated.
Add water if sauce seems dry; cook 1–2 more minutes.
Garnish with green onions and serve immediately.
