Ingredients
  

  • 8 oz noodles rice, wheat, or soba
  • 4 cups fresh spinach washed
  • 2 garlic cloves minced
  • 1 tsp grated ginger
  • 2 tbsp soy sauce or tamari
  • 1 tbsp sesame oil
  • 1 tsp chili flakes optional
  • 2 tbsp water to loosen sauce if needed
  • 2 tbsp chopped green onions for garnish

Instructions
 

  • Cook noodles according to package instructions; drain and set aside.
  • Heat sesame oil in a wok over medium-high heat.
  • Sauté garlic and ginger for 1 minute until fragrant.
  • Add spinach and stir-fry until wilted, about 2–3 minutes.
  • Toss in cooked noodles, soy sauce, and chili flakes; stir until evenly coated.
  • Add water if sauce seems dry; cook 1–2 more minutes.
  • Garnish with green onions and serve immediately.
