  • 8 oz rice or wheat noodles
  • 2 cups sliced bell peppers red, yellow, green
  • 1 medium carrot julienned
  • 2 garlic cloves minced
  • 1 tsp grated ginger
  • 3 tbsp soy sauce or tamari
  • 1 tbsp sesame oil
  • 1 tsp chili flakes optional
  • 2 tbsp chopped green onions or cilantro for garnish

Instructions
 

  • Cook noodles according to package instructions; drain and set aside.
  • Heat sesame oil in a wok over medium-high heat.
  • Sauté garlic and ginger until fragrant, about 1 minute.
  • Add bell peppers and carrot, stir-fry 3–4 minutes until tender-crisp.
  • Toss in cooked noodles and soy sauce; stir to coat evenly.
  • Add chili flakes if desired; cook 1–2 more minutes.
  • Garnish with green onions or cilantro; serve immediately.
