- 1 cup cooked chickpeas mashed
- 1 cup fresh spinach chopped
- 1/2 cup rolled oats
- 2 tbsp ground flaxseed + 5 tbsp water vegan egg substitute
- 1/4 cup finely chopped onion
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
- Olive oil for cooking
Mix flaxseed with water; let thicken 5 minutes.
Combine chickpeas, spinach, oats, onion, spices, and flax mixture in a bowl.
Form mixture into 4 patties about 1/2 inch thick.
Pan-fry with olive oil 4–5 minutes per side or bake 20 minutes until golden.
Serve on buns with greens, avocado, or vegan condiments.
